Super Hot Pepper Quesadillas are a spicy twist on a classic Tex-Mex dish. Perfect for those who love bold and fiery flavors, these quesadillas are made with melted cheese and finely chopped super hot peppers, which are sandwiched between two crispy, golden brown flour tortillas.   1. In a large bowl, mix together the cheese, chopped super hot peppers, and a pinch of salt and pepper.
  2. Heat a large skillet over medium heat. Spread 1/4 of the cheese mixture onto half of one of the tortillas, fold the other half over to form a half-moon shape. Repeat with the remaining tortillas and cheese mixture.
  3. Brush each side of the quesadillas with the olive oil. Place the quesadillas in the hot skillet, cooking 2-3 minutes per side, until the cheese is melted and the tortillas are golden brown.
  4. Cut each quesadilla into 4-6 wedges and serve hot with your preferred toppings.

Notes:

You can also add other fillings to your quesadillas, such as sautéed onions, mushrooms, or cooked chicken or steak. Be sure to handle super hot peppers with care and use gloves if necessary. It's important to finely chop the peppers to distribute the heat evenly throughout the dish. If you prefer a milder version, you can substitute milder peppers or reduce the amount of super hot peppers used.
