Risotto is a rich and indulgent dish that's perfect for spicy food lovers. Made with hot peppers, creamy arborio rice, and savory Parmesan cheese, this risotto packs a bold and flavorful punch. The heat from the hot peppers balances perfectly with the creaminess of the risotto, and the dish is finished with a sprinkling of fresh herbs like basil or parsley. While it may take a bit of time and attention to prepare, the end result is well worth the effort. Hot Pepper Risotto is a great option for a special occasion or a date night in, and it's sure to impress anyone who loves bold and delicious flavors.
Ingredients:
- 6 cups chicken or vegetable broth
- 1/2 cup unsalted butter
- 1/2 cup chopped onion
- 2 cloves garlic, minced
- 2 cups Arborio rice
- 1 cup dry white wine
- 1 cup grated Parmesan cheese
- 1-2 super hot peppers (such as ghost peppers or carolina reaper), finely chopped
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions:
- In a medium saucepan, heat the broth over low heat and keep it warm.
- In a large pot or Dutch oven, melt the butter over medium heat. Add the onion and garlic and sauté until they are soft and fragrant.
- Add the Arborio rice and stir well to coat the rice in the butter. Toast the rice for 1-2 minutes, stirring constantly.
- Pour in the wine and stir until it is absorbed by the rice.
- Begin adding the warm broth to the rice, one ladleful at a time. Stir continuously until the broth is absorbed by the rice before adding the next ladleful. Continue this process for 20-25 minutes, or until the rice is cooked through and creamy.
- Stir in the Parmesan cheese and chopped super hot peppers. Taste and adjust seasoning with salt and pepper as desired.
- Serve hot, garnished with fresh herbs if desired.

Notes:
Be sure to handle super hot peppers with care and use gloves if necessary. It's important to finely chop the peppers to distribute the heat evenly throughout the dish. If you prefer a milder version, you can substitute milder peppers or reduce the amount of super hot peppers used.
